8 Simple Healthy Meal Ideas to Try on Your Next Camping Trip

Planning for good food on your camping trip doesn’t mean you have to live off of granola bars or only eat dehydrated foods. With a cooler and simple planning, you can create delicious meals that will also move with you!

1. Wraps

Packaged tuna and salmon can be mixed up into easy salads. You can also prep tuna salad at home and nestle it among the ice in your cooler. Mix up a chopped, bagged lettuce salad and lay out 4 tortillas. Place salad on the tortilla and put tuna salad on top of it, then roll up the tortillas for healthy, portable lunch wraps.

2. Smoothies

Consider carrying a watertight, thermal jug to carry in your pack so you can have a breakfast smoothie on the trail. There are many low-voltage blenders that will easily whip up a fresh one each morning. Keeping frozen fruit in your cooler will keep the rest of your food cooler as well.

3. Breakfast Bars

Fix flavored oatmeal packets with water and blend up at least three of them, then beat in an egg and bake over the fire with the lid on. You can also make this at home and bring it with you cold, warming it up in the skillet each morning.

4. Eggs In the Window

Grill thick slices of sourdough toast in a skillet and cut a circle out of the center once both sides are toasted. Add an egg to the hole in the toast and a bit of salt and pepper. Cook until the egg is soft. Dunk the center of the toast in the yolk. If you don’t like soft yolk, cook the egg until hard and put jam on the toast center.

5. Caprese Toast

Toast another piece of sourdough in the skillet. Once both sides are crispy, add shredded mozzarella to the top and leave to melt. Once melted, take off the heat and add chopped tomatoes, dried basil, balsamic vinegar, and a little sugar to the toast. This is a wonderful treat if you’re feeling overloaded with high-carb camping foods.

6. Johnnycakes

Corn muffin mix that takes only water or milk can make it easy to make johnnycakes that you can cook in a low-voltage waffle maker or over a fire. They’re delicious with barbecued beans!

7. Chaffles

That low-voltage waffle maker will come in handy if you need a break from the sweet stuff and decide to make chaffles. Eggs and cheese can be blended with a variety of spices and cooked up into chaffles. Add deli meat and build a high-protein sandwich.

8. Baked Potatoes

Carry heavy aluminum foil and double-wrap your potatoes for a campfire treat. Poke them with a fork before you wrap them. Start your fire early so you can cook the potatoes in the coals. Give them at least 30 minutes, then check to see if they’re soft. In addition to butter and sour cream, carry broccoli cheese soup for a potato topping.
