I have an addiction to late night snacks. Twelve years ago when Nick and I started dating, every night we would sit on our couch, watch TV and eat some type of sinful late night snack. Back then we were both younger and of course were able to eat more sinful snacks, such as bowls of ice cream, cookies, a beer and tortilla chips, whatever, but these days I have to be careful about my late night snack (Nick still eats whatever he wants because, well, #menmetabilism. Speaking of #menmetabolism, do any other women ever compare their end of the day steps and calories on their Apple Watch or other fitness tracking tool, with their husband’s, and get sick by how many more calories they burn? The other day I ran a 5k, Nick didn’t workout, and he still burned 200 more calories. WTF?). One of my favorite late night snacks is a cup of almond milk (with ice), a white cheddar rice cake, and a spread of Smucker’s Natural peanut butter. Does that sound gross? It’s not. It’s amazing. But lately I’ve been getting sort of sick of that snack. I found this recipe on Lindsay’s blog and decided to simplify it even more since that’s what I do. So here you go; Freezer Granola Bites.
Freezer Granola Bites
- 1 cup peanut butter (or Sunbutter)
- ½ cup maple syrup
- 3 cups of your favorite granola (I like the KIND brands)
- ¼ cup raisins
- ¼ cup chocolate chips
- Combine all ingredients in a bowl
- Fill 24-30 mini muffins filled with this delicious mixture, press down to assure they are firmly in the cups.
- Freeze for at least two hours. Store in an air-tight container in the freezer. Keep frozen until you want to enjoy them!
Serving size: 1 bite Calories: 88 Fat: 5.2g Saturated fat: 1.3g Carbohydrates: 9g Sugar: 6g Protein: 2.8g I really like the KIND granola. Less sugar, more protein and low FODMAPs. Win win win.
I love using mini muffin tins. You simply mix the ingredients and then press them into the tins. Then, into the freezer they go.You could also make them large, using larger muffin tins, but I like the idea of a smaller “bite”. Believe it or not one little bite typically satisfies me. With my big ol’ glass of almond milk on ice (try it, it’s yum), one bite is the perfect (sinful tasting but not actually sinful) late night snack.And of course if you have young ones with peanut allergies these are also great with Sunbutter (my kids ate them either way). I know a lot of schools don’t allow peanuts/peanut butter so if you need to make a snack for school these are easily modified. Enjoy!
