At first glance you might think this is a Chipotle burrito. But no, I assure you it’s not. It’s stuffed cod, and it’s my new favorite recipe.
I’ve been really enjoying EatingWell recipes lately. This recipe was found on their website, here. I modified it in several ways to make it lower FODMAPs, and (in my opinion) tastier. I really don’t like tilapia. What is tilapia anyway? It freaks me out, so I used cod. I also omitted the garlic and onion and used a Tuscan olive oil to infuse the missing flavors. Instead of mayo I used Greek yogurt (plain) and I may have added just a bit more cheese than the recipe suggested (I’m not too intolerant to lactose so I could do this with no trouble).
Huge hit in this house, and easy to make. The entire recipe ended up costing about thirteen dollars, so less than $3.50 a serving. Not bad. Please, enjoy! And happy holidays.
