Bean Burgers for Nick’s First Meatless Monday

A few weeks ago I made a new black bean burger recipe for dinner and as we were eating Nick said, “I haven’t had any meat this entire day.” In other words, Nick took part in an unintentional “Meatless Monday!”. I was so impressed.

The black bean burger recipe was from Grace at Food, Fitness, FreshAir. As always, I made my own modifications to the recipe. The ingredients highlighted in red were omitted or modified.

Delicious Black Bean Burgers
 
Serves: 8

Ingredients
  • 15oz. can black beans, drained, rinsed, and patted dry
  • 1 red onion, ½ thinly sliced, remaining ½ finely chopped (**contain FODMAPs**)
  • ½ red bell pepper, diced
  • 1 fresh jalapeno, de-seeded and minced
  • 1 cup corn (**buy something other than sweet corn if you don’t want FODMAPs**)
  • ¾ cup whole-wheat breadcrumbs (about 2 slices, toasted and processed) (**buy gluten free if you don’t want FODMAPs**)
  • 1 Tbsp. chili powder
  • 2 tsp. smoked paprika
  • 1 Tbsp. + 1 tsp. vegan Worcestershire sauce (** I used 2 tsp. Frank’s Red Hot, which contain a small amount of FODMAPs **)
  • ½ tsp. salt
  • 1 cup cilantro, tightly packed
  • 2-3 Tbsp. olive oil
  • 5-6 whole-wheat hamburger buns (**Use gluten-free if you don’t want FODMAPs**)
  • Vegenaise or mayo. (**Nick and I used a bit of BBQ sauce to top off our buns**)

Instructions
  1. Heat 1 Tbsp. olive oil in large nonstick skillet. Saute pepper and corn until peppers are tender. Stir in chili pepper, paprika, salt, Frank’s Red Hot, and cook another 1-2 minutes.
  2. Transfer ½ of the mixture into a food processor, scraping any spices remaining on bottom of the pan. Add the beans and breadcrumbs. Puree until smooth. Add parsley, and pulse until combined. Stir in remaining corn/pepper mixture.
  3. Return nonstick skillet to stove and place over medium-high heat. Coat bottom of pan with a light layer of olive oil. Shape bean mixture into 8 burgers. Cook burgers 2-4 at a time, until outer edges are crisp, about 5-6 minutes.
  4. Toast your whole wheat buns and add your favorite condiment (and cheese if you want!).

QUESTION: Any big plans for the week and upcoming holiday weekend? Nick and I are having our second annual “Fourth of July Party” so we’ve got a lot of work to do to prepare. I’m very excited though, I love throwing parties!

    Black bean burgers can be kind of tricky for me– I feel like when they’re bad, they’re REALLY bad (dry, especially), but when they’re good, they’re SO good! Sounds like these definitely fall into the latter category!

    Glad you liked them! Yours look impressively round. Black bean burgers are always a fav.

    I wish I was throwing a party for the 4th! Lot of preparations, but I love making food for those kind of events. Not sure what I’ll be doing yet, but enjoy yours!

    Yum, those look delicious. I’ve been trying to encourage Eric to not eat meet with every single meal… so far it’s not going well but perhaps I will make those haha.

    It seems like 2 seconds ago you had your first 4th of July party! Eric and I are headed to the Cape this weekend but we’ll probably come back late Sunday night or early Monday morning. Sadly I think I’m going to have to work a couple of hours on the 4th. Oh well :)

    I love bean burgers! I’m actually eating one right now. They have to be done right, but when they are, they make a great meal. I have a cookbook called Veggie Burgers Every Which Way, and there’s some great bean/lentil burger recipes in there.

    these burgers look amazing! definitely bookmarking this recipe. i think i’d sub almond meal for the breadcrumbs and it would even spruce up the protein a bit! mm thanks lady :)

    I LOVE bean burgers! I’ve made black bean burgers and cannellini bean burgers, and I definitely prefer the black bean burgers. I’ll have to try this recipe – bring back bean burgers in the THIH household! ;) I’m proud of Nick, too! Will you both participate in meatless days from now on? We’ve been including more of those lately – it’s been fun to experiment with veggie protein sources. BTW, that’s funny that you bought parsley instead of cilantro – I’ve done the exact same thing!

    How funny1 I made black bean burgers just yesterday. I used whole weat flour instead of breadcrumbs and added a lot of Worcestershire sauce and red pepper flakes for the kick. But your recipe looks delicious also. Will have to try!

    I’m so sad we’re missing your party :( I was just thinking about you and the party this morning when I saw the gorgeous weather forecast :)

    I can’t say I’ve ever had a bean burger. I’ve had boca burgers and I enjoy those, and I think many of them contain a lot of beans :) Definitely something I need to make at home. I also love that you bought parsley on accident instead of cilantro :)

    I’m SO excited that you invited Nicole!!! :-) I knew she lived in Ohio, and Nicole and I have also been talking about getting together since I moved to Ohio, but for some reason I was under the mistaken impression she lived further north… This is SO perfect!! :-) Thank you for figuring all this out for me! :-)

    Not only do these black bean burgers look delicious, but I also LOVE your idea of using BBQ sauce with them – a black bean BBQ burger sounds soooo yummy! I can’t wait to try this combo! Thank you for the great idea!!

    I’ve yet to make bean burgers, but these look delicious! I can’t believe it’s almost the 4th of July….I think we may have a neighborhood block party on Sunday the 3rd, then maybe take it easy on the 4th. Have a fun party!

    I LOVE a bean burger! Esp the ones that actually TASTE like beans or vegetables. I don’t like meatless burgers that taste like “meat.”
